同じ「蒸留」という言葉を使いながら、私たちの目指すものは根本的に異なります。 The word "distillation" is shared. The purpose is not.
蒸留とは何か The Principle of Distillation
液体を沸騰させ、生じた蒸気を冷却して再び液体として取り出す技術。
この原理を応用することで、植物から純粋な芳香成分を抽出することができる。
Heat a liquid to boiling, capture the vapor, cool it back to liquid.
This principle allows us to extract the pure aromatic essence of any botanical.
Heat 加熱 — 素材を沸騰させる Boil the botanicals
植物を水と共に加熱し、沸騰させる。熱によって植物に含まれる芳香成分が蒸気へと変化する。
Botanicals are heated with water until boiling. Heat transforms the aromatic compounds within the plant into vapor.
Vapor 蒸気 — 香りを含む蒸気が立ち昇る Aromatic steam rises
沸騰により生じた蒸気は、植物の芳香エッセンスを含んだまま上昇し、蒸留器の管を通って移動する。
The steam rises carrying the plant's aromatic essence through the body of the still.
Condense 冷却 — 蒸気を冷やして液体に戻す Cool the vapor back to liquid
冷却管を通過した蒸気は温度が下がり、再び液体になる。集められた液体には、植物の純粋な香りが凝縮されている。
As vapor passes through the cooling chamber it returns to liquid — holding the plant's pure, concentrated aroma.
「蒸留」とは、熱によって液体を気化させ、冷却して再び液体として取り出す技術です。
しかし何を目的として蒸留するかによって、得られるものはまったく異なります。
蒸留酒が求めるのはアルコール。
私たちが求めるのは植物の香り。
その違いが、すべてを決定します。

But what you are trying to extract changes everything.
Spirits seek alcohol.

Distilled Spirits
Whisky, Gin, Brandy, Vodka, Rum…糖質またはデンプンを発酵させ、生じたアルコールを蒸留することで高濃度のアルコール飲料を作る。 常圧蒸留・減圧蒸留いずれの手法も用いられる。
Fermented sugar or starch is distilled to concentrate alcohol into a beverage. Both atmospheric and vacuum distillation methods are employed.

芳香蒸留水
Aromatic Hydrosol
the Water of the Plant植物を水と共に蒸留し、精油成分の一部が溶け込んだ水を採取する。 アルコールは含まない。発酵工程も不要。植物が本来持つ、繊細で複雑な香りがそのまま水の中に宿る。 蒸留方式は植物によって選択する——熱に強い香気成分には常圧蒸留を、繊細で揮発しやすい成分を持つ植物には減圧蒸留を用いることで、それぞれの植物が持つ香りの全体像を最大限に引き出す。
Plants are distilled with water to collect the aromatic water that captures their essence. No alcohol. No fermentation. The plant's original aromatic complexity is preserved in the water itself. The distillation method is chosen plant by plant — atmospheric distillation for robust aromatic compounds, vacuum distillation for heat-sensitive ones — so that the full aromatic identity of each plant is expressed.

ウイスキー
Whisky / Whiskey
Whisky / Whiskey大麦麦芽を糖化・発酵後に蒸留し、樽熟成で香りと色が生まれる。スコッチはピート燻煙香が特徴。常圧蒸留が主流。
Malted grain is mashed, fermented and distilled, then barrel-aged. Scotch is defined by its peated character. Atmospheric distillation prevails.
ブランデー
Brandy
Brandy / Cognac / Armagnacワインを蒸留後、樽熟成。果実の香りと樽由来のバニラ・スパイスが複雑に絡む。コニャック・アルマニャックが代表。
Wine is distilled and barrel-aged. Fruity esters intertwine with vanilla and spice from the oak. Cognac and Armagnac are the benchmark expressions.

Rum
Rumモラセスを発酵・蒸留。甘くトロピカルな香りで、熟成度により白・ゴールド・ダークに分類。
Molasses fermented and distilled. Sweet, tropical character; classified as white, gold or dark by ageing.
ジン
Gin
Ginボタニカルを浸漬または蒸気接触で香付けする点は芳香蒸留水に最も近いアプローチ。ただし目的はアルコールの濃縮であり、香りは手段に過ぎない。
Of all spirits, gin's botanical infusion approach most resembles our hydrosol method — yet its goal remains alcohol concentration. Aroma is a means, not the end.
ウォッカ
Vodka
Vodka繰り返し蒸留しほぼ無味無臭に近い純粋アルコールを目指す。香りの排除が品質とされる点で、香りの最大化を目指す芳香蒸留水と対極。
Repeatedly distilled toward pure, neutral alcohol. Aroma elimination is considered quality — the polar opposite of our aromatic philosophy.
テキーラ / メスカル
Tequila / Mezcal
Tequila / Mezcalアガベを蒸し焼きにして糖化・発酵後に蒸留。メスカルは土中燻し焼きによりスモーキーな香りが生まれる。植物の個性が凝縮された蒸留酒。
Agave hearts are roasted, fermented and distilled. Mezcal's underground pit-roasting creates signature smokiness — arguably the spirit most defined by a plant's character.
いずれの蒸留酒も、発酵によって生まれたアルコールを高濃度に凝縮することが目的であり、
香りはその過程の副産物として、あるいは意図的な付加として生まれる。
私たちが行う水蒸留は、発酵も、アルコールの濃縮も、いっさい必要としない。
目的は最初から、植物の香りそのものだからだ。
Every spirit above exists to concentrate alcohol through fermentation.
Aroma is incidental — a by-product or intentional addition along the way.
Our water distillation requires neither fermentation nor alcohol concentration.
Because from the very beginning, the plant's aroma is the only goal.
芳香蒸留水ができるまで How Aromatic Hydrosol is Made
常圧 vs 減圧 — 品川水蒸留所では植物の特性に応じて蒸留方式を使い分けている。 常圧蒸留(100℃)は熱に強い香気成分を持つ植物に、減圧蒸留(〜60℃)は加熱によって香りが損なわれやすい繊細な植物に用いる。 方式は違えど、引き出そうとしているものは同じだ——その植物だけが持つ、固有の香りの全体像。
Atmospheric vs. Vacuum — Shinagawa Water Distillery selects the distillation method according to each plant's aromatic character. Atmospheric distillation (100°C) is used for plants with robust compounds; vacuum distillation (~60°C) is used where heat would compromise delicate aromatics. Both methods share a single aim — the full aromatic character unique to that plant.

品川水蒸留所のノンアルコールスピリッツは、ごく少量で一杯の香りを決める素材です。
香りを最大限に引き出すため、私たちは以下の三つの技法を推奨しています。
Shinagawa Water Distillery's non-alcoholic spirits are ingredients that define the aroma of a drink in very small amounts.
To draw out their full aromatic potential, we recommend the following three techniques.
組み上げたドリンクの最上層に、バースプーンの背を伝わせて蒸留水20mlを静かに注ぐ所作。層の維持が目的ではなく、加水を抑えつつ、最後の一筆として香りを主役に置くための技法。
Pour 20ml of hydrosol over the back of a bar spoon onto the surface of the finished drink. The goal is not to maintain a distinct layer, but to place aroma front and centre as the final touch.
- 蒸留水が液面に触れた瞬間、空気との境界面で香気が一気に揮発し、最初の一口の香りを最大化する。
- The moment the hydrosol meets the surface, aromatic compounds volatilise at the air–liquid boundary, maximising first-sip impact.
- 沈下する過程で液全体に香気分子が拡散し、グラスを傾けるたびに再び香りが立ち上る。
- As it sinks, aroma molecules diffuse through the drink, releasing fresh fragrance with each tilt of the glass.
- 氷の成り行きではなく20mlという正確な加水で、閉じていた香りを意図的に開かせることができる。
- A precise 20ml addition — not left to chance dilution from ice — intentionally opens closed aromatic notes.
- バースプーンの背を伝わせる所作そのものが、職人技の可視化として飲み手に印象を残す。
- The act of pouring over the spoon is itself a visible expression of craft that leaves an impression on the guest.
- ドリンクを組み上げ、水・割材まですべてグラスに入れた状態を作る。
- Build the drink completely — ice, mixer and all — before proceeding.
- バースプーンの背をグラス内壁に軽く当て、水面近くに構える。
- Rest the back of a bar spoon lightly against the inside of the glass, just above the liquid surface.
- 蒸留水をスプーンの背に当ててゆっくりと注ぎ、液面に触れさせる。
- Pour the hydrosol slowly over the back of the spoon, letting it meet the surface gently.
- 最後まで静かに。軽く一呼吸置いてから客へ供する。
- Keep everything still. Pause briefly before serving.
空のグラスにアトマイザーで蒸留水を噴霧し、グラスの内部空間(ヘッドスペース)に香りの雲を作ってから液体を注ぐ技法。使用量は任意。液体の比重に依存せず、純粋に芳気だけを設計できる。
Spray hydrosol into an empty glass with an atomiser to create an aromatic cloud in the headspace before pouring the liquid. Volume is discretionary. Aroma is delivered independent of liquid density.
- アルコール度数の高いカクテルや澄んだショートドリンクでも、比重差の影響を受けずに香りを届けられる。
- Works in high-proof cocktails and clear short drinks without any dependency on specific gravity.
- 飲み手が鼻を近づけた瞬間、最も濃い香りを最初の一息で受け取る。
- The guest receives the most concentrated aromatic hit the moment they bring the glass to their nose.
- 噴霧される霧状の水滴は表面積が大きく、気化が速い。香りの立ち上がりが鮮烈。
- Atomised droplets have a large surface area, vaporising rapidly for an immediate and vivid aromatic release.
- プッシュ回数で香りの強さを微調整でき、繊細な味の輪郭を邪魔しない。
- Intensity is finely tuned by the number of sprays, without disturbing delicate flavour structure.
- ガラスアトマイザーに蒸留水を充填する。
- Fill a glass atomiser with the hydrosol.
- 冷やしたグラスを用意し、飲み口から15–20cm離してアトマイズする。
- Hold the chilled glass 15–20cm from the nozzle and spray.
- グラスの内壁全体に霧が行き渡るよう、2–3プッシュを均等に。
- Apply 2–3 even sprays to coat the full interior of the glass.
- 速やかに液体をストレーンし、香気を閉じ込めながら供する。
- Strain the liquid in promptly, trapping the aroma, and serve immediately.
通常のシェイクを終えたのち、一度氷を抜いてから蒸留水20mlを加え、再度シェイクする二段階技法。シェイクの氷による加水で繊細な香気成分が薄まるのを防ぎ、最後に香りを均一に分散させる。
A two-stage technique: shake with ice as usual, remove the ice, add 20ml of hydrosol, then shake again. Prevents delicate aromatic compounds from being diluted during the main shake while distributing aroma evenly throughout.
- シェイクで氷と長時間攪拌すると、揮発性の高い繊細な香気成分が加水とともに薄まってしまう。
- Prolonged agitation with ice dilutes volatile aromatic compounds alongside the liquid.
- 氷を抜いた状態で加えるため、余計な加水が進まず、蒸留水の香りが濃いまま液全体に広がる。
- Adding the hydrosol after ice removal prevents further dilution, keeping aroma concentrated as it disperses.
- 卵白・乳製品・ピューレ系のレシピでも、泡や粘度を壊さずに香りだけを均一に混ぜられる。
- Integrates aroma uniformly without breaking the foam or texture in egg white, dairy, or purée-based recipes.
- ドライシェイクという「もう一段」の所作が、ドリンクの完成度を視覚的に伝える。
- The additional dry-shake step visually communicates the level of craft and finish applied to the drink.
- 蒸留水以外の材料と氷を入れ、通常どおり本シェイク(10–12秒)。
- Combine all ingredients except the hydrosol with ice and shake for 10–12 seconds.
- ストレーナーでシェイカーから氷を取り除く。
- Strain out the ice from the shaker.
- 蒸留水20mlをシェイカーに加え、再度シェイクする。
- Add 20ml of hydrosol to the shaker and shake again without ice.
- ダブルストレーンでグラスへ。泡や粘度が必要な場合は、きめを潰さないよう素早く。
- Double strain into the glass. If foam or texture is needed, work quickly to preserve it.
